How to Easily Grow Shiitake Mushrooms at Home

Shiitake mushrooms (Lentinula edodes) are native to East Asia and are cherished for their rich, savory flavor and meaty texture. They are typically grown on hardwood logs or sawdust blocks. Each method has its own advantages:

  • Hardwood Logs: This traditional method involves inoculating logs with Shiitake spawn. Logs from oak, beech, or sugar maple are ideal.
  • Sawdust blocks: These are more convenient and faster to fruit than logs. They are typically composed of a mixture of sawdust and a binding agent like wheat bran.

Getting Started with Logs

You can easily start your Log Shiitake Mushroom Garden with a pre-made starter kit. It’s great for beginners who want to grow their own organic mushrooms.  To create your own log shiitake mushroom garden, you will need

Steps:

  1. Prepare the Logs: Cut logs during late winter or early spring. Let them sit for a few weeks to allow the natural antifugal compounds to dissipate.
  2. Drill Holes: Drill holes 1 inch deep and 6 inches apart in a a diamond pattern along the log’s length.
  3. Inoculate the Logs: Insert spawn into the holes. If using a plug spawn, hammer trhe plugs into place. For sawdust spawn, use a plunger tool to fill the holes.
  4. Seal the Holes:  Melt wax and brush it over the inoculation points to protect the spawn from contaminants and moisture loss.
  5. Incubate: Stack the logs in a shady, humid area. Logs should be watered occasionally to maintain moisture. It can take 6-12 months for the mycelium to colonize the logs.

Getting Started with Sawdust Blocks

You will need:

Steps:

  1. Hydrate the Block: Follow the kit instructions to hydrate the block properly.
  2. Incubate: Place the block in a dark, humid environment until it is fully colonized by white mycelium.
  3. Fruit the Block: Move the block to to a location with indirect light and higher humidity. Maintain moisture by  misting the block regularly.
  4. Harvest: When mushrooms appear, allow them to mature until the caps are nearly flat. Twist and pull the mushrooms to harvest.
